Soto Padang, The Noodles Were Delicious Creations (Soto Padang)

Recipe Soto Padang. 
Ingredients:
  • 2 L of water

  • 6 lime leaves

  • 100 g suun, soak in hot water until soft, drain
  • 6 pieces potato cakes, ready to eat
Stew seasoning:
  • 5 cloves garlic, crushed
  • 1 tsp coriander grain, toasted
  • 1 ½ tsp salt
  • 1½ tsp pepper
Ground spices:
  • 10 red onions
  • 6 cloves of garlic
  • 2 red chilies
  • 2 cm turmeric fuel
  • 1 cm ginger
Fry sauce, puree, stir-fry until oily:
  • 3 tablespoons vegetable oil
  • 6 red chilies
  • 3 red onions
  • ½ tsp salt
  • ½ tsp sugar
Complement:
  • 1 stalk scallion, thinly sliced
  • 3 limes
  • 3 tablespoons fried shallots, ready-made
  • 6 pieces of red chips
How to make:
  1. Boil the water with beef tenderloin in, beef tetelan, and spice to the stew until the meat is tender. Remove and drain.
  2. Strain the broth water. Cut beef and meat tetelan stretched thin.
  3. Heat oil, fry beef in many oil and heat until crispy, remove from heat. Drain and set aside.
  4. Heat 3 tablespoons oil fry the rest, saute ground spices, ginger, bay leaves, lemon grass, lime leaves, cloves, anise, salt, sugar, and pepper. Stir until cooked, remove from heat. Pour in the broth, bring to a boil back.
  5. Set suun and cakes in a serving bowl, pour the soup broth.
  6. Serve hot together with complementary and chili fries
