Soto bongko

Hi friends had a few days not to share recipes and today I will share the recipe to make soup bongko, here's how to make it:

Ingredients:
  • 5 pieces of chicken heads
  • 3 pieces of chicken wings, cut into 2 parts
  • 5 pieces of chicken claw, crushed
  • 2 bay leaves
  • 3 stalks lemongrass, crushed
  • 5 lime leaves, bones discarded leaves
  • 1 tablespoon salt
  • 1/2 tablespoons granulated sugar
  • 750 ml of juice diluted coconut milk coconut milk
  • 500 ml thick coconut milk from 1 coconut
  • 2 tablespoons cooking oil for frying
Ground Spices:
  • 12 red onions
  • 4 cloves of garlic
  • 8 curly red chilies
  • 2 large red chilies
  • 3 pieces of red chili sauce
  • 2 cm galangal
  • 3 eggs hazelnut, roasted
  • 1/2 teaspoon coriander
  • 1/4 teaspoon cumin
  • 1/4 teaspoon nutmeg
  • 2 cm turmeric, burned
  • 1 cm ginger
Supplementary Material:
  • 5 pieces of rice cake, cut into pieces
  • 1 piece of fried tofu, cut into pieces
  • 150 grams of bean sprouts, brewed
  • 3 boiled eggs
  • 5 teaspoons soy sauce
  • 250 grams of crackers kanji
  • 2 tablespoons fried onions for topping
How to make soup bongko:
  1. Heat the oil. Saute ground spices, bay leaves, lemon grass and lime leaves until fragrant.
  2. Add a chicken head, chicken wings, and chicken claw. Stir until it changes color.
  3. Add thin coconut milk, salt, and sugar. Cook until chicken is cooked.
  4. Pour the coconut milk. Cook, stirring until boiling.
  5. Serve in a bowl of rice cake. Add the tofu, bean sprouts, and boiled eggs. Flush hot sauce along with the chicken.
  6. Sprinkle fried shallots. Add soy sauce on top. Serve with crackers
